And now, for my real theory:
(I apologize for a TRIPLE post, it's just it was a bit too hard to put it all in one...)
Hm...It's not looking good for Jake.
I think that something will happen that separates Bella and Edward before or soon after the wedding, and somehow Bella ends up with Jake (as in, with him physically, not *together*). Edward will think that Jacob kidnapped her, but really it is not so!
Jake tries, one last time, to get Bella's true love, but in the end he must realize that Edward is her soulmate. There may be a showdown between Jacob and Edward, and at one critical climax of the fight, Jake has the upper hand and is about to finish Edward off it seems, and says "Bella, you could save him, just tell me you truly love me, and I'll let him go!" and Bella is about to say yes when Edward says "Do what's best for you, not for me."
And then...Bella kisses Jake, sweet and teary and of her own will. Then, Jake, crying, lets Edward go and our favorite vampire embraces Bella.
Jake turns and bursts into a wolf, howling in misery as he runs away.
Edward stares after, reading Jake's final, mental message. "Take care of her...I love you, Bella!"
Edward and Bella (if they haven't already) get married and etc etc...
Then, one day soon after Bella supposedly "disappears/fakes her death/etc". a headline appears:
"WolfBoy: Hero and Mystery:"
A huge wolf saved the life of young ____ ____, taking a bullet to the chest/taking on a bear that was set on mauling her. The "werewolf" collapsed shortly after making sure _____ was safe, and while _____ ran for help for her savior, the wolf seemingly got up and dragged itself off. The rescue team followed the tracks as they grew into what looked like human foot and hand prints, all the way to the body of a young man, naked and bearing wounds that the Wolf reportedly was to have received. Are werewolves really not as far fetched as we have been taught to think? Are there some forces out there that we don't understand yet? Are there still people who care about strangers--enough to give up their own lives? The answer to that question is a firm yes. Jacob Black--the boy thought to be a wolf--died a hero's death, and his last words:
"Bella..."

Or something like that. I based most of my prediction on a Phantom of the Opera (original novel) plot, so...yeah.
It's a bit far fetched XD. But I like it. I think I'll write a fanfic.
